PGS: The Biochemical Engineering of Wine
Anthony is a senior from South Carolina majoring in Chemical and Biomolecular Engineering. This semester, he’s been studying the fascinating chemistry behind wine, from the biochemistry of fermentation to how terroir and regional practices shape the flavor profiles of wines around the world. Through his Penn Global Seminar “The Biochemical Engineering of Wine”, he is taking these concepts from the classroom to the vineyards of Mendoza, Argentina, where he’ll explore how scientific principles and local winemaking traditions intersect.
Outside of the classroom, Anthony is active in the American Institute of Chemical Engineers, Penn’s LGBTQ+ senior society Carriage, and the Society of Hispanic Professional Engineers. When he’s not studying, you might find him trying out a new craft project, learning American Sign Language, working in his polymer research lab, or testing a new recipe in the kitchen. Beyond Penn, Anthony loves exploring new areas of Philly, riding his bike on the Schuylkill River Trail, or trying new local spots with his friends. After he graduates, he is planning to pursue a Ph.D. in materials science and engineering.
On his upcoming trip to Mendoza, he is most excited to:
- Hike in the scenic Portreillos in the Andean foothills
- See firsthand how some of the wines he has tried in class are made, from grapevine to bottle, and hear stories from the winemakers themselves
- Explore Argentinian towns known for their unique architecture and rich culture
- Taste the local cuisine with the Andes on the horizon
- See the mix of modern and traditional equipment to produce wine
